This was a very different but fabulous upside down cake.  Most of us are familiar with Pineapple Upside Down Cake which is a more coffee cake kind of cake and generally no inside filling.  It was a nice change to use nectarines instead of the usual canned pineapple slices, the streusel filling added another flavor dimension and the chiffon cake was light and fluffy … not as heavy as the usual batter used for the traditional Pineapple Upside Down Cake.  All those variations really made for a cake that was more “special”  and dinner party worthy than the classic it was based on.
